Ingredients

  • 4 chicken breasts or thighs
  • 4 medium potatoes, cut into wedges
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (or dairy-free alternative)
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning (or your favorite blend)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine olive oil, minced garlic, grated Parmesan cheese, and Italian seasoning. Season with salt and pepper.
  3. Coat the potato wedges in the garlic Parmesan mixture and place on the baking sheet. Rub the remaining mixture on the chicken and arrange on the sheet.
  4. Bake in the oven for approximately 25-30 minutes until golden and cooked through.
