- 2 cups cooked quinoa
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- Fresh parsley for garnish
- 1 cup Greek yogurt
- 1/2 cucumber (grated and drained)
- 1 garlic clove (minced)
- 1 tablespoon olive oil
- 1 tablespoon vinegar
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a bowl, mix olive oil, garlic powder, oregano, salt, and pepper for the marinade.
- Coat chicken breasts with the marinade and let sit for a few minutes.
- Grill chicken for 6-7 minutes on each side until golden-brown and fully cooked.
- Combine Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, salt, and pepper in a bowl for tzatziki.
- Mix until creamy and smooth.
- In serving bowls, create a bed of cooked quinoa.
- Slice grilled chicken and place over the quinoa.
- Add diced cucumber, cherry tomatoes, red onion, bell pepper, and feta cheese.
- Drizzle with tzatziki and garnish with fresh parsley.
