- 1 ½ lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1 cup uncooked long-grain white rice
- 1 ¾ cups low sodium chicken broth
- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 cup cherry tomatoes, halved
- ½ medium red onion, finely chopped
- 1 cup diced cucumber, seeds removed
- ½ cup crumbled feta cheese
- ½ cup sliced black olives
- ½ cup chopped spinach
- ¼ cup chopped fresh parsley or dill
- ½ cup cooked chickpeas
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish. Spread the uncooked rice evenly across the bottom of the dish. Carefully pour the chicken broth over the rice, making sure to moisten it fully.
- Whisk together the Greek yogurt, olive oil, minced garlic, lemon juice, lemon zest, oregano, paprika, salt, and black pepper until smooth and well combined. Add the cubed chicken to the mixture, stirring until every piece is coated.
- Spoon the chicken and yogurt mixture evenly over the rice layer. Sprinkle the cherry tomatoes, chopped red onion, and diced cucumber over the top. Cover the dish tightly with aluminum foil and bake for 40 minutes.
- Remove the foil and sprinkle the crumbled feta cheese over the top. Bake uncovered for an additional 15 minutes until the cheese is golden and chicken reaches 165°F internally.
- Let the casserole rest for about 10 minutes before serving.
Notes
Feel free to swap out ingredients like chicken for beef or turkey. You can also substitute long-grain rice with whole-grain rice.
