- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat your oven to 375°F (190°C). In a medium skillet over medium heat, add a drizzle of oil. Once heated, add the diced onions and ground beef, cooking until the onions are translucent and the beef is browned, about 5-7 minutes. Stir in the minced garlic, cumin, and chili powder, cooking for another minute until fragrant.
- Lay out the tortillas on a clean surface. Spoon a generous amount of the beef mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish. Pour the enchilada sauce over the rolled tortillas and sprinkle the shredded cheese on top.
- Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden brown. Allow cooling for a few minutes before serving.
Notes
For added flavor, try adding beans, corn, or peppers to the beef mixture. You can prepare the filling ahead of time to make assembly easier.
