Description

A simple and flavorful ground beef enchiladas recipe that brings comfort and joy to your dining table.

Ingredients

Scale
  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). In a medium skillet over medium heat, add a drizzle of oil. Once heated, add the diced onions and ground beef, cooking until the onions are translucent and the beef is browned, about 5-7 minutes. Stir in the minced garlic, cumin, and chili powder, cooking for another minute until fragrant.
  2. Lay out the tortillas on a clean surface. Spoon a generous amount of the beef mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish. Pour the enchilada sauce over the rolled tortillas and sprinkle the shredded cheese on top.
  3. Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden brown. Allow cooling for a few minutes before serving.

Notes

For added flavor, try adding beans, corn, or peppers to the beef mixture. You can prepare the filling ahead of time to make assembly easier.
