- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40–45 minutes, turning halfway.
- Heat a skillet over medium heat, add remaining olive oil and onion. Sauté until softened. Add ground beef and taco seasoning; cook until browned, about 7–10 minutes.
- Layer bowls with roasted sweet potatoes, ground beef, avocado, cottage cheese, and drizzle with hot honey.
Notes
For extra crispy sweet potatoes, avoid overcrowding on the baking sheet. Experiment with toppings for a customizable meal.
