  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth (or vegetable broth if preferred)
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, drizzle olive oil and heat over medium heat. Add chopped onion and cook until translucent, about 3 to 4 minutes. Stir in minced garlic and cook for an additional minute.
  2. Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5 to 7 minutes. Drain excess fat if necessary.
  3. Stir in diced carrots and potatoes, followed by beef broth, diced tomatoes, dried thyme, salt, and pepper. Bring to a gentle boil, then reduce heat to low and cover. Let simmer for about 30 minutes, until vegetables are tender.
