- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth (or vegetable broth if preferred)
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, drizzle olive oil and heat over medium heat. Add chopped onion and cook until translucent, about 3 to 4 minutes. Stir in minced garlic and cook for an additional minute.
- Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5 to 7 minutes. Drain excess fat if necessary.
- Stir in diced carrots and potatoes, followed by beef broth, diced tomatoes, dried thyme, salt, and pepper. Bring to a gentle boil, then reduce heat to low and cover. Let simmer for about 30 minutes, until vegetables are tender.
- Serve hot and enjoy!
