- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup chocolate chips
- 1 cup chocolate chips (for topping)
- 1 tsp coconut oil (for melting)
- Flaky sea salt, optional
Instructions
- Mix the cookie dough base: Combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt in a mixing bowl until smooth. Stir in 1/4 cup of chocolate chips.
- Spread it out: Transfer the cookie dough to parchment paper and press it into an even layer about 1/2-inch thick.
- Melt and pour the chocolate: Melt 1 cup of chocolate chips with 1 tsp of coconut oil, then pour over the cookie dough and spread evenly. Sprinkle with flaky sea salt if desired.
- Chill in the freezer for about 10 minutes until firm, then cut into chunks and enjoy!
