Ingredients

  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for melting)
  • Flaky sea salt, optional

Instructions

  1. Mix the cookie dough base: Combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt in a mixing bowl until smooth. Stir in 1/4 cup of chocolate chips.
  2. Spread it out: Transfer the cookie dough to parchment paper and press it into an even layer about 1/2-inch thick.
  3. Melt and pour the chocolate: Melt 1 cup of chocolate chips with 1 tsp of coconut oil, then pour over the cookie dough and spread evenly. Sprinkle with flaky sea salt if desired.
  4. Chill in the freezer for about 10 minutes until firm, then cut into chunks and enjoy!
