Ingredients

  • 2 1/4 cups (280 g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1/3 cup light brown sugar, packed
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1/2 cup raspberry jam (or your favorite fruit preserves)

Instructions

  1. Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cornstarch, and salt; set aside.
  3. Cream together butter, light brown sugar, and granulated sugar until light and creamy.
  4. Add egg yolk, vanilla extract, and almond extract; mix until combined.
  5. Slowly add dry ingredients to the wet mixture and mix until just combined.
  6. Form dough balls and press a heart shape into each using your finger or a cookie stamp.
  7. Chill dough balls in the freezer for 30 minutes or refrigerator for 1 hour.
  8. Fill each heart indent with 1/2 teaspoon of warmed jam.
  9. Bake for 10-12 minutes or until edges are golden brown.
  10. Cool on baking sheets for 5 minutes, then transfer to a cooling rack.

Notes

Chill your dough to maintain shape and avoid overbaking. Feel free to experiment with different jams and add-ins.
