- 1 cup whole wheat flour
- ½ cup protein powder (your favorite brand)
- ½ cup rolled oats
- ¼ cup honey or maple syrup
- 1 cup almond milk (or any milk of your choice)
- ½ cup unsweetened applesauce
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup fresh or frozen blueberries
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a large bowl, combine the dry ingredients: whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt, whisking until mixed.
- In another bowl, mix together the wet ingredients: honey (or maple syrup), almond milk, applesauce, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries carefully.
- Divide the batter evenly among the muffin cups, filling them about ¾ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
Do not overmix the batter to keep muffins light and fluffy. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
