Ingredients

  • 1 cup whole wheat flour
  • ½ cup protein powder (your favorite brand)
  • ½ cup rolled oats
  • ¼ cup honey or maple syrup
  • 1 cup almond milk (or any milk of your choice)
  • ½ cup unsweetened applesauce
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup fresh or frozen blueberries
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a large bowl, combine the dry ingredients: whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt, whisking until mixed.
  3. In another bowl, mix together the wet ingredients: honey (or maple syrup), almond milk, applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries carefully.
  5. Divide the batter evenly among the muffin cups, filling them about ¾ full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins light and fluffy. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
