Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs (parsley or chives) for garnish
Instructions
- In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Using a potato masher or an immersion blender, mash or blend the soup to your desired consistency.
- Stir in the heavy cream and cheddar cheese until melted.
- Season with thyme, salt, and pepper.
- Serve hot, garnished with fresh herbs.
Notes
Use a mix of potato varieties for added flavor and texture. For a lighter version, you can substitute half-and-half for the heavy cream.
