Ingredients

  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Using a potato masher or an immersion blender, mash or blend the soup to your desired consistency.
  4. Stir in the heavy cream and cheddar cheese until melted.
