Ingredients
2 cups cooked chicken, shredded
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn, drained
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can (14 oz) diced tomatoes
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Tortilla strips for serving
Avocado, cilantro, and lime for garnish
Instructions
1. In a large pot, sauté onion and garlic over medium heat for 3-4 minutes until softened.
2. Add shredded chicken, black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper. Stir well.
3. Bring to a boil, then reduce heat and simmer for 20 minutes to meld flavors.
4. Serve hot with tortilla strips, avocado, cilantro, and lime.
Notes
Add bell peppers or zucchini for extra vegetables.
Use rotisserie chicken to save prep time.
Adjust spice level with more or less chili powder.
If soup thickens when reheating, add extra broth.
Variation: Make vegetarian with vegetable broth, beans, and tofu instead of chicken.
