Ingredients
1 lb beef stew meat, cubed
4 cups beef broth
1 cup carrots, chopped
1 cup potatoes, diced
1 cup celery, chopped
1 can (14.5 oz) diced tomatoes
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
1 cup green beans, chopped (optional)
Instructions
1. In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides.
2. Add the onion and garlic, and sauté until the onion is translucent.
3. Stir in the beef broth, diced tomatoes, carrots, potatoes, celery, and thyme.
4. Bring to a boil, then reduce heat to low and simmer for about 1 to 1.5 hours, or until the beef is tender.
5. In the last 15 minutes, add the green beans if using.
6. Season with salt and pepper to taste before serving.
