Quick and satisfying chicken quesadillas that bring the family together with minimal fuss and loads of flavor.
Ingredients

- 2 cups salsa chicken (shredded chicken mixed with salsa)
- 1 cup refried beans
- 2 cups shredded cheese (preferably a blend of cheddar and Mexican cheese)
- 8 small flour tortillas
- Cooking spray or oil for frying
Instructions
- Preheat a skillet over medium heat and add a light spray of cooking oil.
- Place one tortilla in the skillet, add 1/4 cup salsa chicken, 2 tablespoons refried beans, and a handful of shredded cheese on one half, then fold.
- Cook for 3–4 minutes until golden brown, flip and cook for another 3–4 minutes until the cheese is melted.
- Remove from skillet, repeat with remaining tortillas, cut into wedges, and serve warm with toppings.
Notes
Keep quesadillas warm in a low oven while cooking the rest. For larger batches, consider baking at 400°F (200°C) for 15-20 minutes.
