Description

Quick and satisfying chicken quesadillas that bring the family together with minimal fuss and loads of flavor.


Ingredients

  • 2 cups salsa chicken (shredded chicken mixed with salsa)
  • 1 cup refried beans
  • 2 cups shredded cheese (preferably a blend of cheddar and Mexican cheese)
  • 8 small flour tortillas
  • Cooking spray or oil for frying

Instructions

  1. Preheat a skillet over medium heat and add a light spray of cooking oil.
  2. Place one tortilla in the skillet, add 1/4 cup salsa chicken, 2 tablespoons refried beans, and a handful of shredded cheese on one half, then fold.
  3. Cook for 3–4 minutes until golden brown, flip and cook for another 3–4 minutes until the cheese is melted.
  4. Remove from skillet, repeat with remaining tortillas, cut into wedges, and serve warm with toppings.

Notes

Keep quesadillas warm in a low oven while cooking the rest. For larger batches, consider baking at 400°F (200°C) for 15-20 minutes.
