Delicious homemade chicken quesadillas that are easy to prepare, customizable, and kid-approved, perfect for busy weeknight dinners.

- 2 cups cooked chicken, shredded
- 1 cup salsa
- 1 can refried beans
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 small flour tortillas
- Cooking spray or oil for greasing the skillet
Instructions
- In a mixing bowl, combine the shredded chicken with the salsa until evenly coated.
- Heat a skillet over medium heat and lightly grease it with cooking spray or oil.
- Place a tortilla in the skillet and spread refried beans over half of it. Spoon on the salsa chicken mixture and sprinkle with cheese. Fold the tortilla and cook for 2-3 minutes on each side until golden brown and cheese is melted.
- Cut into wedges and serve hot with salsa or guacamole.
Notes
Don’t overcrowd the skillet; cook one or two quesadillas at a time. Experiment with cheese varieties for different flavors.
