Description

This one-dish comfort meal features crispy honey-glazed chicken thighs on a bed of golden roasted potatoes. The smoky-sweet BBQ sauce and self-basting technique create restaurant-quality flavor with minimal effort.


Ingredients

1.5 lbs chicken thighs (skin-on)
3 medium yellow potatoes (peeled and cubed)
2 tbsp honey
1 tbsp BBQ rub (smoked paprika, garlic, peppers)
1/2 cup chicken broth
1 tsp butter
1 tsp olive oil
Salt and pepper to taste


Instructions

Brine chicken: Whisk chicken broth with 2 tbsp BBQ rub. Marinate thighs for 15 minutes
Preheat oven to 425°F. Line baking sheet with parchment paper
Season potatoes: Toss with 1 tsp olive oil, salt, and pepper
Arrange chicken skin-side up on the sheet, surrounded by potatoes
Glaze: Brush remaining BBQ rub onto chicken tops
Roast for 30 minutes, then glaze with 2 tbsp honey
Broil 5 minutes for caramelized finish

Notes

Use parchment paper to prevent sticking
Use a meat thermometer to check internal temperature
Serve with extra honey glaze on the side
