- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce (your choice)
- ¼ cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup mixed vegetables (frozen or fresh)
- Chopped green onions or parsley for garnish
Instructions
- Heat a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken in the skillet for 3-4 minutes on each side until golden brown. Remove and set aside.
- In the same pan, toast the uncooked rice for 1-2 minutes, stirring frequently. Then, pour in the chicken broth, BBQ sauce, and honey, stirring to combine.
- Lower the heat, return the chicken to the pan, and bring to a gentle boil. Cover and simmer for 15 minutes. Afterward, add mixed vegetables, cover again, and continue cooking for an additional 5 minutes. Let it rest for 5 minutes before serving and garnish with green onions or parsley.
Notes
Adjust seasoning to taste. Use brown rice for added fiber and texture, but increase cooking time.
