- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- In a large skillet, heat oil and sear chicken for 3-4 minutes on each side until golden brown, then remove and let rest.
- Toast uncooked rice in the skillet for 1-2 minutes, pour in chicken broth and half of the BBQ sauce mixed with honey.
- Return chicken to the skillet, pour remaining sauce over, cover, and simmer for 15 minutes.
- Add mixed vegetables, cover, and cook for an additional 5 minutes until rice is fluffy and chicken is cooked through.
- Let sit for 5 minutes, garnish with chopped green onions, and serve.
Notes
For a vegetarian option, replace chicken with firm tofu or chickpeas. Use vegetable broth for the easiest swap.
