Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet, heat oil and sear chicken for 3-4 minutes on each side until golden brown, then remove and let rest.
  3. Toast uncooked rice in the skillet for 1-2 minutes, pour in chicken broth and half of the BBQ sauce mixed with honey.
  4. Return chicken to the skillet, pour remaining sauce over, cover, and simmer for 15 minutes.
  5. Add mixed vegetables, cover, and cook for an additional 5 minutes until rice is fluffy and chicken is cooked through.
  6. Let sit for 5 minutes, garnish with chopped green onions, and serve.

Notes

For a vegetarian option, replace chicken with firm tofu or chickpeas. Use vegetable broth for the easiest swap.
