A cozy and creamy cornmeal pudding that brings warmth and comfort to your home. Perfect for dessert or a sweet breakfast treat.
Ingredients
Scale
- 1 cup cornmeal
- 2 cups milk
- 1/2 cup molasses (or maple syrup/honey)
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 tablespoons butter (or coconut oil)
- 1 teaspoon vanilla extract
Instructions
- Get your ingredients ready: Gather all your ingredients and warm your milk and butter together in a saucepan over medium heat.
- Mix it up: Gradually whisk in the cornmeal and stir continuously to prevent lumps. Add molasses, sugar, salt, and spices, stirring as the mixture thickens for about 10-15 minutes.
- Bake it: Once thickened, stir in vanilla, pour into a greased dish, and bake at 350°F (175°C) for 30-35 minutes until set and golden.
Notes
For a firmer pudding, add more cornmeal. You can substitute milk for any plant-based milk to create a dairy-free version.
