Thick beef patties seared in cast-iron and glazed with a rich, smoky balsamic-based sauce make these Irish-American pub sliders perfect for group meals. The substitute sauce uses apple cider vinegar and molasses for complex flavor without alcohol or pork.
Ingredients
Ground Beef 1 lb (450g)
Stale or Crusty Bread 1 slice
Large Onion 1 (red or yellow)
Whiskey-Balsamic Substitute 1/2 cup
Tomato Jam (optional) 2 tbsp
Fresh Rosemary 1 tsp
Instructions
Chill beef patties 30 minutes to set shape
Toaster bread at 350°F as patties chill
Grate cool onion to start caramelizing
Divide chilled beef into 4 (sliders) or 2 (regular burgers)
Pat into flat disks for sizzling crust
Heat cast-iron skillet 10 minutes until smoking
Sear patties 5 minutes on first side
Flip and reduce heat to 300°F
Cook to 130-135°F internal temperature
Deglaze skillet with 1/3 cup balsamic substitute during cooking
Simmer sauce 2 minutes to concentrate
Brush warm sauce over cooked patties before resting
Notes
Replace whiskey in sauce with a mix of apple cider vinegar and molasses
Double recipe for 6-8 sliders if preferred
Store sauce in fridge for up to 3 days
Use halal-certified soy sauce in substitute
