- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup buttermilk (or dairy-free alternative)
- 1 cup shredded cheese (sharp cheddar or your choice)
- 1/4 cup chopped fresh chives
- 2 tablespoons chopped fresh dill
- 2 tablespoons melted butter (add extra for slathering)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with muffin liners.
- In a large mixing bowl, whisk together flour, baking soda, and salt until well combined.
- Stir in shredded cheese, chives, and dill until evenly distributed.
- Pour in buttermilk and melted butter, mixing gently until just combined; do not overmix.
- Divide the batter among muffin cups, filling them about three-quarters full. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Let muffins cool for a few minutes in the tin before transferring to a wire rack. Serve warm with butter.
Notes
For variations, try different cheeses or herbs. Best enjoyed fresh but can be stored or frozen for later.
