Description

Easy and comforting Irish soda bread muffins filled with cheese and fresh herbs, perfect for breakfast or a warm snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk (or dairy-free alternative)
  • 1 cup shredded cheese (sharp cheddar or your choice)
  • 1/4 cup chopped fresh chives
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons melted butter (add extra for slathering)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with muffin liners.
  2. In a large mixing bowl, whisk together flour, baking soda, and salt until well combined.
  3. Stir in shredded cheese, chives, and dill until evenly distributed.
  4. Pour in buttermilk and melted butter, mixing gently until just combined; do not overmix.
  5. Divide the batter among muffin cups, filling them about three-quarters full. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  6. Let muffins cool for a few minutes in the tin before transferring to a wire rack. Serve warm with butter.

Notes

For variations, try different cheeses or herbs. Best enjoyed fresh but can be stored or frozen for later.
