- 2 lbs ground beef (80/20 recommended)
- 1 cup milk
- 1 cup dry breadcrumbs (or Stove Top Stuffing)
- 1 large egg, lightly beaten
- 1/2 cup finely chopped onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup Worcestershire sauce
- 1 tablespoon dried parsley
- 1/2 cup ketchup (for the glaze)
- 1/4 cup brown sugar (for the glaze)
- 1 tablespoon apple cider vinegar (for the glaze)
Instructions
- Preheat your oven to 350°F (175°C), and lightly grease a standard loaf pan or line a baking sheet with parchment paper.
- Combine the milk and breadcrumbs. Let sit for about 5 minutes until the breadcrumbs absorb the liquid.
- Add in the ground beef, beaten egg, finely chopped onion, salt, pepper, Worcestershire sauce, and dried parsley. Gently mix together until just combined; do not overmix!
- Shape the mixture into a loaf and place it in the prepared loaf pan or on the baking sheet.
- Whisk together the glaze ingredients: ketchup, brown sugar, and apple cider vinegar. Spread half of the glaze over the meatloaf.
- Bake in the oven for about 45 minutes, then spread the remaining glaze on top and bake for an additional 15 to 20 minutes until the internal temperature reaches 160°F (71°C).
- Let the meatloaf sit for 10 minutes before slicing to retain juices.
Notes
For extra moisture, consider adding grated zucchini or using ground turkey. Serve with mashed potatoes or steamed veggies.
