Description

A vibrant pasta salad bursting with flavors reminiscent of street corn and summer. Perfect as a side or main dish.


Ingredients

  • 8 oz. rotini pasta
  • 2 cups fresh corn kernels (or canned/frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, fresh corn, halved cherry tomatoes, diced red onion, diced bell pepper, and chopped cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour over the pasta mixture and toss gently.
  4. Fold in the diced avocado just before serving.

Notes

Add sliced jalapeños for a spicy kick or crumbled feta for a cheesy delight. Store leftovers in an airtight container for up to three days, but add avocado fresh before serving.
