A vibrant pasta salad bursting with flavors reminiscent of street corn and summer. Perfect as a side or main dish.
Ingredients

- 8 oz. rotini pasta
- 2 cups fresh corn kernels (or canned/frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1 lime, juiced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and let cool.
- In a large bowl, combine the cooled pasta, fresh corn, halved cherry tomatoes, diced red onion, diced bell pepper, and chopped cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour over the pasta mixture and toss gently.
- Fold in the diced avocado just before serving.
Notes
Add sliced jalapeños for a spicy kick or crumbled feta for a cheesy delight. Store leftovers in an airtight container for up to three days, but add avocado fresh before serving.
