  • 1/4 cup unsalted butter, melted
  • 1/2 cup cream cheese, softened
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Whisk to break up any lumps.
  2. Whisk together the eggs, melted butter, softened cream cheese, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients, and mix until a dough forms.
  4. Place the dough on parchment paper dusted with almond flour and roll into a rectangle about 1/4 inch thick.
  5. Spread a layer of softened cream cheese over the dough, leaving a small border. Sprinkle generously with cinnamon and erythritol.
  6. Roll the dough tightly from one long edge to the other, forming a log. Slice into 1 to 1.5-inch pieces.
