  • 1/2 cup granulated sweetener (like erythritol or monk fruit)
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 4 ounces full-fat cream cheese, softened
  • 1 large egg
  • 1.5 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened cream cheese until smooth, then mix in the egg and vanilla extract.
  3. In a separate bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  4. Fold the dry ingredients into the wet mixture until no flour streaks remain. Chill the dough for at least 1 hour.
  5. Scoop tablespoon-sized portions onto a parchment-lined baking sheet.
  6. Bake for about 15 minutes until golden. Allow cooling before dusting with powdered sweetener.
