- 1 pound fresh green beans, trimmed
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon soy sauce
- Salt and pepper to taste
- 1 cup crushed beef bacon or crispy onions for topping
Instructions
- Preheat your oven to 350°F (175°C). In a large pot, bring salted water to a boil. Once boiling, add the fresh green beans and blanch them for about 3–4 minutes, or until they turn a vivid green. Drain them in a colander and set aside.
- Heat a splash of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant—about 5 minutes.
- Pour in the heavy cream and chicken broth, followed by the cream cheese, soy sauce, salt, and pepper. Stir until the cream cheese melts and the mixture is silky smooth. Toss the blanched green beans into the skillet.
- Transfer the mixture into a greased baking dish, top with shredded cheddar cheese, and your choice of crushed beef bacon or crispy onions. Bake for 25–30 minutes, or until bubbly and golden brown.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This casserole is freezer-friendly, allow the casserole to cool completely before freezing.
