- Incorporate the shredded coconut and sweetener, stirring until combined.
- Portion the mixture onto a parchment-lined sheet pan or plate using a tablespoon.
- Freeze for about 15 minutes until firm.
- Carefully separate the cookies and store in a sealed container in the fridge.
Notes
Use unsalted butter for a better flavor, or coconut oil for a dairy-free version. Swap nut butters as desired and adjust sweetness based on preference.
