- 1/2 cup unsweetened almond flour
- 1/4 cup powdered erythritol (or sweetener of your choice)
- 1/3 cup fresh strawberries, pureed
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, combine the softened cream cheese and melted coconut oil. Blend until smooth and creamy.
- Add powdered erythritol, vanilla extract, and a pinch of salt. Mix until well incorporated.
- Gently fold in the pureed strawberries until mixed gently.
- Spoon the mixture into silicone molds or an ice cube tray, pressing down to hold together.
- Freeze for about 30 minutes until solid. Store in an airtight container in the fridge.
Notes
Ensure the cream cheese is room temperature for smooth consistency. Feel free to use other keto-friendly berries as alternatives.
