- 1 box of lemon cake mix (15.25 oz)
- 4 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- ½ cup powdered sugar (for rolling)
- 2 tablespoons butter (for glaze)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (or almond milk)
- ½ teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, combine the lemon cake mix, cream cheese, butter, egg, and vanilla extract. Mix until fully incorporated; the dough will be thick and sticky.
- Using a medium cookie scoop, roll dough into balls and coat with powdered sugar. Place on a parchment-lined baking sheet.
- Bake for 9 to 10 minutes until puffed and cracked. Let cool completely before glazing.
- For the glaze, melt 2 tablespoons butter, then mix in 1 cup powdered sugar, 2-3 tablespoons milk, and ½ teaspoon vanilla extract until smooth. Drizzle over cooled cookies.
Notes
Chill the dough for about 30 minutes if it’s too sticky. Store cookies in an airtight container for up to 3 days. They can also be frozen for up to 3 months.
