- ½ teaspoon salt
- Zest of 1 lemon
- 1 cup powdered sugar, sifted (113 grams)
- 2–3 tablespoons fresh lemon juice
- Sprinkles (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line your baking sheets with parchment paper.
- Cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes. Add eggs one at a time, mixing well after each. Stir in vanilla and lemon extract (if using).
- Add flour, salt, and lemon zest to the mixture and mix until just combined.
- Use a cookie press or scoop dough onto baking sheets. Bake for 7-9 minutes, until set but not browned. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
- For the glaze, whisk together powdered sugar and enough lemon juice to create a thin glaze. Drizzle over cookies and top with sprinkles if desired.
Notes
Ensure butter is softened for easy mixing. Adjust lemon juice for glaze consistency. Store in an airtight container. Cookies can be frozen.
