Ingredients
1 cup lentils
2 tablespoons olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups vegetable broth
1 can (14.5 oz / 400 g) diced tomatoes
1 teaspoon cumin
Salt and pepper to taste
2 cups spinach or kale, chopped
Instructions
1. Rinse the lentils under cold water and set aside.
2. In a large pot, heat the olive oil over medium heat.
3. Add onion, carrots, and celery; cook until softened, about 5 minutes.
4. Stir in garlic and cook for another minute.
5. Add lentils, vegetable broth, diced tomatoes, cumin, salt, and pepper. Bring to a boil.
6. Reduce heat, cover, and simmer 20–25 minutes until lentils are tender.
7. Stir in spinach or kale and cook an additional 5 minutes.
8. Taste and adjust seasoning before serving hot.
