- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, at room temperature
- 3 large eggs
- 1/2 cup limoncello liqueur
- 1/2 cup sour cream or Greek yogurt
- Zest and juice of 2 fresh lemons
- 2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a larger bowl, cream the softened butter and sugar together until fluffy.
- Add eggs one at a time, mixing well after each addition, then mix in the lemon zest.
- Fold in sour cream and lemon juice into the butter-sugar-egg mixture.
- Combine the dry and wet mixtures, folding in the limoncello (or substitute). Pour into the prepared pan.
- Bake for 30–35 minutes or until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack. Drizzle with a glaze made of powdered sugar and lemon juice.
Notes
For a non-alcoholic version, substitute limoncello with apple juice or lemon juice. Use Greek yogurt for moisture or any unsweetened dairy-free yogurt for a lighter cake.
