- 4 medium-sized potatoes, washed and cubed
- 1 lb (450g) ground beef
- 2 tablespoons taco seasoning
- 1 cup cheddar cheese, shredded
- ½ cup sour cream
- 2 green onions, sliced
- 1 cup salsa
- 1 cup black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and cube the potatoes into bite-sized pieces. Toss in olive oil, salt, and pepper, then spread on a baking sheet.
- Roast the potatoes for 25-30 minutes until crispy and golden.
- While the potatoes roast, heat a skillet over medium heat. Cook the ground beef, breaking it up until browned, about 5-7 minutes.
- Add taco seasoning to the beef and stir. Simmer for a few minutes to blend flavors.
- Assemble the bowls by layering roasted potatoes, seasoned beef, black beans, and corn in a serving bowl. Top with cheddar cheese and return to the oven for 5 minutes until cheese melts.
- Serve with a dollop of sour cream, green onions, and salsa.
