- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup oats (quick oats for chewy cookies)
- 1 cup shredded coconut (optional)
- 1/2 cup chopped nuts (optional, walnuts or pecans)
Instructions
- Preheat the oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, followed by the mango puree and vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually add to the wet mixture, stirring gently until just combined.
- Fold in oats, coconut, and nuts if using.
- Drop spoonfuls of dough onto a greased baking sheet and bake for 10-12 minutes until edges are golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For dairy-free, substitute butter with coconut oil. Use canned mango puree if fresh is unavailable.
