  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup oats (quick oats for chewy cookies)
  • 1 cup shredded coconut (optional)
  • 1/2 cup chopped nuts (optional, walnuts or pecans)

Instructions

  1. Preheat the oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Beat in the egg, followed by the mango puree and vanilla extract.
  3. Whisk together the flour, baking soda, and salt in another bowl. Gradually add to the wet mixture, stirring gently until just combined.
  4. Fold in oats, coconut, and nuts if using.
  5. Drop spoonfuls of dough onto a greased baking sheet and bake for 10-12 minutes until edges are golden.
  6. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For dairy-free, substitute butter with coconut oil. Use canned mango puree if fresh is unavailable.
