- 6 large eggs
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1 cup whole milk
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1 cup heavy whipping cream
- 1 ripe mango, pureed
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a round 9-inch cake pan.
- Beat the egg whites until soft peaks form, about 2-3 minutes.
- Whisk egg yolks with half of the granulated sugar until pale and creamy.
- Fold in the remaining sugar, vanilla, whole milk, flour, baking powder, and salt until just combined.
- Gently add the beaten egg whites into the batter until no white streaks remain.
- Pour batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
- Mix sweetened condensed milk, evaporated milk, and heavy cream in a bowl until fully combined.
- Remove the cake from the pan and poke holes in the top with a toothpick.
- Pour the milk mixture evenly over the cake and let soak for at least 30 minutes.
- Whip the remaining cream with powdered sugar until stiff peaks form, then spread over the cake.
- Top with fresh mango chunks and a drizzle of purée.
