Ingredients

  • 6 large eggs
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 cup whole milk
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup heavy whipping cream
  • 1 ripe mango, pureed
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round 9-inch cake pan.
  2. Beat the egg whites until soft peaks form, about 2-3 minutes.
  3. Whisk egg yolks with half of the granulated sugar until pale and creamy.
  4. Fold in the remaining sugar, vanilla, whole milk, flour, baking powder, and salt until just combined.
  5. Gently add the beaten egg whites into the batter until no white streaks remain.
  6. Pour batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
  7. Mix sweetened condensed milk, evaporated milk, and heavy cream in a bowl until fully combined.
  8. Remove the cake from the pan and poke holes in the top with a toothpick.
  9. Pour the milk mixture evenly over the cake and let soak for at least 30 minutes.
  10. Whip the remaining cream with powdered sugar until stiff peaks form, then spread over the cake.
  11. Top with fresh mango chunks and a drizzle of purée.
