  • 2 tablespoons Olive oil (or avocado oil)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Salt (sea salt or kosher)
  • 1/2 teaspoon Black pepper (freshly cracked)
  • 1/4 cup Fresh dill (or dried dill/parsley)
  • Vegetable sides (asparagus or bell peppers)
  • Lemon slices or tomatoes (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the salmon fillets dry with a paper towel and drizzle a tablespoon of olive oil over each fillet.
  2. Sprinkle salt and pepper over the fillets. In a bowl, mix minced garlic, remaining olive oil, lemon juice, and fresh dill. Pour this mixture over the salmon fillets and add lemon slices or tomatoes on top.
  3. Place the fillets on a parchment-lined baking sheet, arrange vegetable sides around them, drizzling with olive oil, and seasoning. Roast for about 12-15 minutes until salmon easily flakes with a fork.
