- 1 lb ground beef
- 1 large egg
- 1/2 cup plain breadcrumbs
- 1/2 cup whole milk
- 1/2 cup finely diced yellow onion
- 1/3 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 1/2 tsp kosher salt
- 2 tbsp brown sugar
Instructions
- Preheat your oven to 375°F (190°C). Grease your 12-cup muffin tin with non-stick spray.
- Combine breadcrumbs and milk in a mixing bowl and let sit for a couple of minutes.
- Add diced onion, garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, thyme, smoked paprika, salt, and pepper to the mixture, stirring well.
- Mix in the ground beef gently, ensuring not to overmix.
- Divide the mixture into the prepared muffin cups and press down lightly.
- Mix 1/4 cup of ketchup with 2 tablespoons of brown sugar for the glaze and spoon over each meatloaf.
- Bake for 18-22 minutes until the internal temperature reaches 160°F (71°C).
- Rest in the pan for 5 minutes before serving.
Notes
Allowing the meatloaves to rest after baking keeps them moist and tender.
