Ingredients

  • 1 lb ground beef
  • 1 large egg
  • 1/2 cup plain breadcrumbs
  • 1/2 cup whole milk
  • 1/2 cup finely diced yellow onion
  • 1/3 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 2 tbsp brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your 12-cup muffin tin with non-stick spray.
  2. Combine breadcrumbs and milk in a mixing bowl and let sit for a couple of minutes.
  3. Add diced onion, garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, thyme, smoked paprika, salt, and pepper to the mixture, stirring well.
  4. Mix in the ground beef gently, ensuring not to overmix.
  5. Divide the mixture into the prepared muffin cups and press down lightly.
  6. Mix 1/4 cup of ketchup with 2 tablespoons of brown sugar for the glaze and spoon over each meatloaf.
  7. Bake for 18-22 minutes until the internal temperature reaches 160°F (71°C).
  8. Rest in the pan for 5 minutes before serving.

Notes

Allowing the meatloaves to rest after baking keeps them moist and tender.
