  • 3 medium zucchinis, sliced into rounds

  • 2 cloves garlic, minced
  • Juice of 1 lemon

  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup shredded mozzarella or Italian cheese blend
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken and zucchini with olive oil, garlic, lemon juice, dried oregano, dried basil, salt, and black pepper until well-coated.
  3. Spread the chicken and zucchini mixture evenly in a 9×13-inch baking dish. Sprinkle mozzarella and Parmesan cheese over the top.
  4. Bake uncovered for 25-30 minutes, or until the chicken is cooked through and the cheese is golden brown.
  5. Garnish with freshly chopped parsley before serving.
