- 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons extra virgin olive oil
- Salt, to taste
- Black pepper, to taste
- 2 medium zucchini, sliced
- 2 red bell peppers, chopped
- 1 large red onion, sliced
- 2 cups cherry tomatoes, halved
- 1 cup Kalamata olives, pitted and halved
- 4 cloves garlic, minced
- ¼ cup sun-dried tomatoes, chopped
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- ½ teaspoon dried thyme
- Fresh lemon juice from 1 lemon
- ½ cup feta cheese, crumbled
- Fresh parsley, optional, for garnish
Instructions
- Prepare the ingredients: Wash and slice all vegetables and cut the chicken into bite-sized pieces.
- Sear the chicken: Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the chicken, season with salt and pepper, and cook undisturbed for about 5 minutes until golden. Flip and cook for another 5 minutes until fully cooked. Remove from the pan and set aside.
- Cook the vegetables: Add the remaining olive oil to the same pan. Sauté the onion and garlic until fragrant and softened. Add zucchini and bell peppers, cooking until tender-crisp. Stir in cherry tomatoes, olives, and sun-dried tomatoes.
- Combine: Return the chicken to the pan. Sprinkle with oregano, basil, and thyme, then drizzle with fresh lemon juice. Toss gently to combine. Finish with crumbled feta and optional parsley.

Avoid overcrowding the pan to ensure the chicken browns evenly. Use seasonal vegetables for freshness.
