- 1 ½ pounds boneless, skinless chicken breasts, cut into chunks
- 3 medium zucchinis, sliced into rounds
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup shredded mozzarella or Italian cheese blend
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss together the chicken chunks and sliced zucchini with olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper.
- Spread the chicken and zucchini mixture evenly in a 9×13-inch baking dish.
- Sprinkle the mozzarella and Parmesan cheeses over the top.
- Bake uncovered for 25–30 minutes, until the chicken is cooked through and the cheese is golden and bubbly.
- Sprinkle fresh parsley over the top just before serving.
Notes
Cut chicken and zucchini into uniform sizes for even cooking. Store leftovers in an airtight container for quick meals the next day.
