Ingredients
1 cup lentils
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 can diced tomatoes (14.5 oz)
6 cups vegetable broth
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
2 cups spinach
Juice of 1 lemon
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
3. Stir in garlic, cumin, and paprika. Cook for 1 minute.
4. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
5. Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
6. Stir in spinach and lemon juice. Cook for 5 more minutes.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh parsley.
