Ingredients

- 2 lbs beef chuck roast
- 4 cups beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
- 4 dried guajillo chiles
- 4 dried ancho chiles
- Salt and pepper to taste
Instructions
- Toast the guajillo and ancho chiles in a skillet over medium heat for 2–3 minutes until fragrant, then remove stems and seeds.
- In a blender, combine toasted chiles, chopped onion, minced garlic, cumin, oregano, paprika, and 1/2 cup of beef broth. Blend until smooth.
- In a slow cooker, combine beef chuck roast, spice mixture, remaining beef broth, bay leaves, salt, and pepper. Stir gently, cover, and cook on low for 8 hours until beef is tender and shred with forks in the pot.
Notes
For added flavor, serve with fresh cilantro, diced onions, and a squeeze of lime. Can also be used for tacos or quesadillas.
