- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar (or a splash of lemon juice)
- Salt and pepper to taste

Instructions
- Hard boil the eggs in a pot of cold water, bring to a boil over medium-high heat, and let sit for 10-12 minutes. Transfer to ice water.
- Once cooled, peel the eggs and slice each in half lengthwise, scooping out the yolks into a mixing bowl.
- Mash the yolks, then mix in mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until fluffy.
- Spoon the yolk mixture back into the egg white halves and garnish with chives or paprika.
