Ingredients

- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder

- 1/4 cup granulated sugar
- 1 egg
- 1/4 cup milk
- 1/2 tsp vanilla extract
Instructions
- Melt the butter and brown sugar together in a saucepan, then add the pineapple chunks.
- Spoon the pineapple mixture into muffin cups.
- Combine the dry ingredients in a bowl, then cream the sugar and egg together.
- Mix in the milk and vanilla, then add the dry ingredients.
- Pour the batter over the pineapple mixture and bake for 20-25 minutes.
- Cool briefly before flipping onto a platter.
Notes
Allow the cakes to cool briefly in the tin to prevent sticking. Feel free to substitute fruits and experiment with toppings for variation.
