Delightfully creamy mint chip mousse cups that celebrate St. Patrick’s Day with a refreshing mint flavor and rich chocolate chips.


Ingredients

  • 2 cups (480 ml) heavy whipping cream
  • 1/2 cup (60 g) powdered sugar
  • 1 teaspoon mint extract
  • A few drops green food coloring (optional)
  • 1/2 cup (90 g) mini chocolate chips (semi-sweet recommended)
  • 4 oz (115 g) cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt

Instructions

  1. Chill your mixing bowls and beaters in the fridge for about 15 minutes.
  2. Beat softened cream cheese with powdered sugar until smooth, then mix in vanilla extract and sea salt.
  3. Whip heavy cream in chilled bowl until soft peaks form, adding green food coloring and mint extract during whipping.
  4. Fold cream cheese mixture into whipped cream gently.
  5. Fold in mini chocolate chips until evenly distributed.
  6. Spoon mousse into cups or ramekins, cover, and refrigerate for at least 2 hours.
  7. Garnish with mint sprig or extra chocolate chips before serving.

Notes

For a lighter version, mix heavy cream with half-and-half. You can customize flavors with different extracts or add fruit.
