Ingredients
2 lbs beef stew meat
4 cups beef broth
2 cups water
3 carrots, sliced
2 potatoes, diced
1 onion, chopped
2 celery ribs, sliced
1 can diced tomatoes
1 cup green beans, cut
2 garlic cloves, minced
2 bay leaves
Salt and pepper to taste
1 tablespoon olive oil
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add beef and brown on all sides.
3. Pour in beef broth and water; bring to a boil.
4. Add onion, garlic, bay leaves, carrots, potatoes, celery, and tomatoes.
5. Reduce heat and simmer for 1 hour.
6. Add green beans and simmer for another 30 minutes.
7. Remove bay leaves, season with salt and pepper, and serve hot.
