- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 cups broccoli florets
- Cooked rice or noodles for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, garlic, egg, salt, and pepper. Mix gently and form into meatballs, placing them on a parchment-lined baking sheet.
- Toss broccoli florets around the meatballs on the baking sheet.
- In a saucepan, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and cornstarch slurry over medium heat until thickened.
- Pour the sauce over meatballs and broccoli, and bake for 20-25 minutes until meatballs are cooked through and broccoli is tender.
- Serve over rice or noodles.
Notes
Leftover meatballs can be stored in an airtight container in the fridge for up to three days. For longer storage, freeze in portions for up to three months.
