Ingredients

- 1 lb chicken breast, cut into pieces
- 1 cup rice (white or brown)
- 1 can pineapple chunks (with juice)
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until translucent, about 3-4 minutes.
- Add the chicken pieces and cook until golden brown on the outside, about 5-7 minutes.
- Stir in the rice, pineapple (with juice), and soy sauce. Season with salt and pepper to taste. Bring to a gentle boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until rice is tender.
- Fluff the rice with a fork, garnish with chopped green onions, and serve.
Notes
Use chicken thighs for a juicier option. Fresh pineapple can be substituted for canned, and tofu can replace chicken for a vegetarian version.
