- 3 garlic cloves (minced)
- 1 cup dry orzo pasta
- 1 tsp dried thyme
- 3 cups low sodium chicken broth
- 5 ounces baby spinach
- Juice from ½ lemon
- ½ cup grated Parmesan cheese
- Freshly ground black pepper (for serving)
- Chili flakes (for serving)
Instructions
- Prepare Your Ingredients: Grate Parmesan, chop onion, mince garlic, and season salmon fillets with garlic powder, paprika, salt, and pepper.
- Sear the Salmon: In a skillet, heat olive oil and butter, then sear seasoned salmon for 3-4 minutes on each side until golden, then remove from skillet.
- Cook the Orzo: In the same skillet, sauté onion and garlic for 2 minutes, add thyme, salt, and pepper, then toast orzo. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 8 minutes, adding spinach, lemon juice, and Parmesan, adjusting seasoning as needed. Return salmon to skillet and warm through for an additional 2-3 minutes.
