Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, egg, melted butter (or coconut oil), and vanilla extract.
- Combine the wet ingredients with dry ingredients and stir gently until just combined.
- Fill each muffin tin cup about 2/3 full with batter.
- Bake for 12-15 minutes or until golden brown. Check for doneness with a toothpick.
- Allow to cool briefly in the pan before removing.
