- 1/2 cup of milk (or a non-dairy milk alternative)
- 2 tablespoons of butter (for cooking – or use olive oil for a healthier option)
Instructions
- Prepare the Potatoes: Peel and grate the raw potatoes, then squeeze out excess moisture.
- Mix All Ingredients: Combine grated and mashed potatoes, flour, baking powder, salt, and pepper. Mix wet ingredients in a separate bowl and fold into the dry mixture.
- Cook the Pancakes: Heat a skillet with butter, scoop the potato mixture into the pan, flatten slightly, and cook until golden brown on both sides.
Notes
For crispy boxty, ensure grated potatoes are well-drained. Keep warm in an oven if making a large batch.
